How to start a coffee cart, trailer, or truck
Mobile coffee has the highest margin per cup in the industry — and the lowest startup cost in food service. Here's how to launch one in 90 days.
Cart vs trailer vs truck
- Push cart ($8K–$25K): events, farmers markets, office lobbies. Lowest cost, lowest volume ceiling (~100 cups/day).
- Trailer ($30K–$80K): tow to any site, larger menu, 200–400 cups/day. Sweet spot for most new operators.
- Truck ($60K–$150K): full mobility, biggest menu, 400–700 cups/day. Higher fuel + maintenance.
Equipment essentials

- Commercial grinder + decaf grinder
- Water tanks (fresh + waste) and pump
- Power: generator, battery bank, or shore power
- Refrigeration for milk + alternative milks

Permits & legal (don't skip)
- Business license + EIN
- Mobile food vendor permit (city or county)
- Health department inspection + food handler cards
- Commissary kitchen contract (required in most jurisdictions)
- Vehicle insurance + general liability ($1M minimum)

A typical coffee cart day:
- 120 drinks × $5.50 avg = $660 revenue
- COGS (22%): $145
- Labor (1 barista, 6 hr): $120
- Site fee / fuel / commissary: $80
- Net per day: ~$315 (47%)
